Listen folks, I made gnocchi for dinner. It was quick, simple and delicious and you should totally go do it. Melanie asked me if I'd made anything cool lately...THIS IS IT MELANIE.

Here's the simple recipe.  The best part is that it calls for instant potatoes so that the whole mess is mixed, kneaded and sliced by the time your water boils.

It was a lot yummier than the fresh gnocchi that I've bought at the store, although, if your husband is a food snob who used to be a chef at a French restaurant he might pretend he doesn't love it because he knows you used mashed potato flakes.

We're going to be eating a fair amount of gnocchi over the next few weeks because I am preparing for my family Christmas dinner. We're going to do the Feast of Seven Fishes for Christmas Eve and a huge Italian dinner for Christmas. I can't believe it's taken us so long to do this. I am pinning like mad!!
